Got my iPhone working tickety-boo (although it doesn't expunge emails) over both wi-fi and over the mobile network. I'm in the process of setting up my wife's Blackberry. Just waiting for the emails to start syncing.

I'm going to have a look at this later, seems intriguing - http://z-push.sourceforge.net/soswp/

The Z-push was a bust. It installed OK and everything but when I went to set it up on the iPhone side I discovered the iPhone only supports one ActiveSync account at a time. I am already using GMail to sync calendars and contacts so I had to knock it on the head. :(

The good news though, is that I've quite successfully set up contact syncing between the iPhone and Horde. Unfortunately, I can't abandon the GMail syncing because there's no way to sync Thunderbird contacts with Horde.
