Tools to monitor and log system status?

HI all,
At about the same time every night (around 22:00) my B2 becomes totally unresponsive for a few minutes. I can't access it via SSH, samba, through the web, nothing.
There's nothing in my log files that might indicate what the problem is and no cron jobs set to run at that time.
I want to be able to leave something running that will, for example, log the CPU, IO, memory etc. every few minutes so I can see what's happening at that time.
Does anyone have any good suggestions about what to use? If not, I'll just knock up a script that runs a whole load of commands every few minutes and dump the output into a text file.
